Like, they will eventually bring the games back, even if they at one point told the fans that they weren't making any more games?

Sega is part of SEGA Sammy, a pretty big company. I don’t think they would die without Sonic. They make money from many different things. They are are involved in console games, mobile games, PC games

Sonic is already dead to some people. So they wouldn’t care. 
If they stopped making games, the other stuff would slow down and eventually stop. Sonic would be mocked for being a failed franchise. But eventually the mockery would fade as people forget Sonic himself. 
I think that’s the worst case scenario. Everyone forgets Sonic The Hedgehog except as a footnote in video game history.
